We´re having a rainy Sunday Supper table here, which doesn´t bother me at all since we´re having cake. Still warm, with chunks of fruit inside, walnuts and chocolate chips on top. Another very good coffee cake recipe to add to my collection. Full of flavor, simple and kid-friendly. Wrap it up and put it in your kid´s lunchbox.
This cake came out surprisingly good. First I thought my cake tin would be too big, and then my batter curdled like crazy, even after the last batch of flour was added. Curdled batters make me feel very dumb, like how can I still get those after a million years baking coffee cakes? I make my own puff pastry but I can´t get a cake batter not to curdle? There was nothing else to do but pop it into the oven and wait.
Though it would´ve been better to use a square pan
next time, mainly because I think round pans are for tall cakes, but that´s just
one of my little baking obsessions. Cut into squares this cake is just the
perfect snack or take-to-the-office type of coffee cake. You will be thanked.
I changed the original recipe a bit by adding spices,
a different fruit, walnuts and choco chips. The base batter lends itself to
that, it practically begs you to try a different combination every time. With
only one piece of fruit per recipe, this can pretty much be the ideal cake to
use when you have one lonely fruit rolling around in your fridge.
If you have a
fresh peach try this with just cinnamon. I would if I could get my hands on
some kind of summery stone fruit. But I can´t, it´s winter still. And still
raining. Can you believe it? A whole rainy week. The nerve. At least I still
have some chocolate scones. And now a pear and chocolate coffee cake. Pretty
good in the end.
I cut my pear in medium chunks. It results in a better
contrast of smooth crumb and tender fruit when you bite into it. And if you,
like me, don´t wait until it´s completely cool and dive your fork into a warm
piece of cake, the chocolate will still be soft, like in a warm chocolate chip
cookie. Wonderful.
PEAR CHOCO WALNUT COFFEE CAKE
Note: if you can´t find whole
wheat flour use 1 ¼ cups all purpose flour.
For the topping:
¼ cup
granulated Sugar
1
teaspoon ground Cinnamon
¼ cup
walnuts, chopped
For the Coffee Cake:

Tbs (115g) unsalted butter, room tº
1
cup all purpose flour
¼ cup
superfine whole wheat flour
2
teaspoons baking powder
½ teaspoon
salt
¼ teaspoon
cinnamon
1/8
teaspoon ground ginger
Pinch
of ground allspice
1/3
cup granulated sugar
2
large eggs
1
teaspoon pure vanilla extract
2/3
cup whole milk
1 large
pear, peeled, cored and coarsely chopped
¼ cup
chocolate chips
For the topping mix all
ingredients in small bowl and set aside.
Preheat the oven to 375ºF/
180ºC
Grease a 8-inch (23cm) round
baking pan.
Place the flour, baking,
powder, salt, cinnamon, ginger and allspice in a small bowl and whisk to mix. Set aside.
Place the sugar and butter in
a medium sized bowl and using an electric mixer beat them until fluffy, about 3
minutes.
Add the eggs one at a time and
then add the vanilla. Add the flour mixture and the milk alternatively in about
2 batches of each, beating after each addition until almost incorporated. At
the end you still want to see streaks of flour and milk.
Using a wooden spoon, fold in
the pear until everything is just combined. Pour mixture in prepared pan,
spreading evenly. Sprinkle the cinnamon walnut sugar over the top, and finally
the chocolate chips.
Bake until golden brown and a
toothpick inserted in the middle comes out clean, about 30 minutes.
Let the cake cool in the pan
on a wire rack.

I had to skip the FFwD post this week too, we do not really have good scallops around here and I must say that I had the urge to post about somthing other than food. Your fall type of cake looks perfectly baked, as usual, and I am sure that you made a lot of people happy by sharing it! ReplyDeleteSomething that I like of this cake is that it's thin, you know, I'm always counting calories and fat and so on, so having a thin slice makes me feel less guilty.

ReplyDeleteJust to let you know, you accidentally left the spices (cinnamon, ginger, allspice) out of the recipe directions. I went ahead and whisked them into the dry ingredients.
